Post Thanksgiving/Back On Track Meal

I ate like a slam fool Thanksgiving.  I can’t even blame Thanksgiving because I allowed my eating to get out of whack at least a week before Thanksgiving.  I needed to reset my body.  I have to get my salt and sugar craving back in balance.  I have to cut off all outside food (both fast food and sit down restaurants) for a while (at least a week) so I can get back to my normal eating and portion habits.

My husband ate a soup exclusively for a day or two to lose weight.  I modified the recipe I think he used because I couldn’t find the original one.  I eat both of these recipes exclusively for 1-3 days.  Feel free to add meat if you like but this is what I do.

Vegetable Soup

1.5  TBSP olive oil

1/4 large onion (diced)

1/4 cabbage head (diced)

3/4 cup of each: green beans, carrots, corn, peas (I used frozen), Pomi tomatoes (crushed)

1 cup water

1tsp Tony Chachere Creole Seasoning

1. Saute onion in olive oil until soft then add cabbage.  Cook for about two additional minutes.

2. Add veggies, tomatoes, and water.

3. Bring to a boil than lower heat, cover, and simmer for 20 minutes.

4. Add seasoning when finished.

Fruit Salad (Yummy Yummy)

14.75 oz can apricot

20 oz can sliced pineapple (dice the slices)

29 oz can pear halves (dice the halves)

a cluster of grapes

1 grapefruit (slices cut in half)

Add all fruit to bowl and stir
